2 eggs
2 cups of buttermilk
2 cups all purpose flour
2 tbsp sugar
2 tsp baking powder
1 tsp baking soda
1 tsp salt
1/2 stick unsalted butter (melted)
1/2 tsp vanilla extract
1-2 tbsp vegetable oil
maple syrup for serving

In a bowl using an electric mixer, beat the eggs until frothy, 2-3 mins. Turn mixer off and add buttermilk, melted butter, flour, sugar, baking powder, baking soda, salt, and vanilla. Continue to beat just until the mixture is smooth, about 2-3 mins.

Preheat griddle to medium heat. Spray with nonstick spray and pour about 1/3 cup of batter for each pancake. When bubbles begin to form on the edges, turn and cook an additional 1-2 minutes. Serve warm with maple syrup
