Clean and thinly slice - 1/4 to 1/8 inch many potatoes - make lots because this is a popular dish that never has leftovers. Lay the slices into a baking dish with a 1/3 overlap - that is 2/3 of each slice should be exposed and 1/3 covered by the next slice. Drizzle heavily with olive oil and generously sprinkle with sea salt. Bake around 40 minutes at 400º - They are done when they look crunchy. Serve as is.
