1 1/2-2 pounds of hamburger
Large red or white onion, chopped fine
Green bell pepper, chopped
1 can of chopped Jalapeno peppers (for Dad's chili
add one more can)
Garlic powder
1 package of dry mix for chili beans (be sure to pay
attention to the "heat factor" on the package)
2 cans light kidney beans
2 cans dark kidney beans
2 cans pinto beans
2 cans small white beans
1 big can of chopped tomatoes or 2 cans of Rotel
brand (good because it also has onions/chilis
2-3 capfuls of apple cider vinegar
1-2 teaspoons of white sugar

Brown hamburger in a tall stock pan on medium heat, add onion, green pepper, jalapenos, garlic powder and dry mix and allow a few minutes to blend all the flavors. Add all beans and chopped tomatoes, let simmer for hours on the stove or in a crockpot. After an hour or so, add apple cider vinegar and sugar and then taste-test it (you might need more of something). For Dad's chili, be sure and add a little extra kick of chili powder.

Serve it in big bowls with cornbread or sourdough bread and a generous portion of real butter. If you want a real mess, shred some cheddar cheese and get out the sour cream to throw on top. Enjoy!
