Bread baskets~
8 slices of white bread, crusts removed
2 Tbsp. butter or margarine, softened
Eggs~
2 Tbsp. butter or margarine, softened
7 eggs, beaten
3 Tbsp. chopped chives
Salt
8 (2x2-inch) squares sharp cheddar cheese

Bread basket~
flatten bread with a rolling pin. spread butter on one side of each slice. press bread, butter-side-down, into muffin tins. Bake 350* for 12-15 min., lightly toasted.
Eggs~
melt butter in skillet, combine eggs and chives and cook till a soft scramble. Season with salt. when bread baskets are done, increase oven to 475*. fill baskets with scrambled eggs - top each with square of cheddar cheese. return to oven for about 2 minutes or until cheese is melted.
