1 1/4 cup flour
1 tsp baking soda
1/2 tsp salt
2 large eggs at room temperature
1/2 tsp vanilla
1/2 cup unsalted butter, softened
1 cup sugar or honey
3 ripe bananas, smashed, about 1 cup
1/2 cup walnuts (optional)

Directions:
Directions:
Cream sugar and butter until light and fluffy. Add eggs. Sift together flour, soda and salt and gradually add to sugar-butter mixture. Add bananas. Fold in walnuts if desired or use as topping. Bake in loaf pan for 1 hour at 350º.
