1 cup sugar
1 cup vegetable oil
3 large eggs
3 1/2 cups all- purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1 teaspoon vanilla extract
1 cup nuts (or choc.chips, raisins, M & M's)

Mix oil & sugar, stir with sturdy spoon, add the eggs, one at a time. set aside. In separate bowl mix flour, baking powder, and salt. Gradually add one cup at a time into the liquids. Stir in the vanilla and nuts. Cover with saran wrap, and chill at least one hour (I usually mix at night and bake in the morning.) Heat oven to 350* grease 2 baking sheets. Divide dough into 4 logs about 10 x 2 place logs a couple inches apart, and sprinkle with cinnamon sugar, and bake for 20 min. let cool for 5 minutes. Then slice about 3/4 inch wide. Arrange the cookies flat side down, and bake for 17 minutes more. I've heard they keep well in tins, but we eat them so fast i wouldn't know. ENJOY
