2 Fresh Cucumbers, peeled and thinly sliced
1-2 Medium Tomatoes, cut into bite sized pieces
1 small Yellow onion, thinly sliced
Approximately 1/2 cup Mayonnaise (Helman's is the best)
1 tsp salt
1/4 tsp ground black pepper

Directions:
Directions:
Place the cucumbers in a colander and salt heavily with the teaspoon of salt. Allow to set and weep for 30-45 minutes. This removes much of the water in the cukes and it will also remove any bitterness from store bought waxed cucumbers. Transfer cukes to a bowl and add the remaining ingredients. If the salad is too dry, add more mayo. If too wet use a slotted spoon to serve.

This salad has been a family staple and a family favorite for my entire life. I goes well with a pot roast, fried chicken, grilled hamburgers, you name it. Sometimes I sprinkle a little dill weed on the top but I usually just serve it as written. I have taken this to countless pot lucks and it is always a hit!
