Cinnamon Cucumber Rings Recipe

large cucumbers
1 c. canning lime
1/2 c. vinegar
1 tsp. alum
1/2 bottle red food coloring
1 1/2 c. vinegar
6 c. sugar
3 oz. red hot candies
1 c. water
4 cinnamon sticks

Directions:
Directions:
Peel and slice cucumbers enough for 1 gallon. Clean out seeds leaving just a ring.

Mix 1 c. canning lime with 4 qts. water and pour over rings and soak for 24 hours. Then drain & rinse.

Simmer for 2 hrs. in a mixture of 1/2 c. vinegar, 1 tsp. alum, food coloring and enough water to cover.

Drain again and put in large pan. Make a mixture of 1 1/2 c. vinegar, 6 c. sugar, red hot candies, 1 c. water and cinnamon sticks. Bring to boil and pour syrup over the drained rings and let stand overnight.

Next day drain off and reheat syrup and pour back over rings and let set again overnight.

Following day, pack in pint jars, pour boiling syrup on and seal. Put in hot water bath for 5 min. Make sure they seal.
