2 cups dried Black Eyed Peas
4 Green Onions, chopped
1 cup Olive Oil
Juice of 1 1/2 Lemons
1/2 cup parsley, chopped
Salt and Freshly ground Black Pepper to taste

Directions:
Directions:
Place peas in a saucepan and cover with water. Bring to a boil, cover, turn off the heat. Let sit 1 hour.
Drain the peas, add fresh water and simmer 10 minutes, or until tender but not mushy! Do not over cook! Drain and cool.
Blend remaining ingredients together to form a dressing and toss with the black eyed peas.
Serve now or chill

This is such a delicious salad! I have also used frozen Black eyed peas and cooked until just tender. In a pinch you can even use canned Black eyed peas but they must be well drained and rinsed with water. We call this Good luck salad because when we lived in the south every one ate back eyed peas on New Years for good luck in the coming year. Well my ex-wife Kathleen and Derek never cared much for the New Years traditional food so after I had tried this recipe out on a pot luck and everyone loved it I started making it for New Years so that my family could have good luck too, hence Derek coined the name, Good Luck Salad!
