3 T Olive Oil
2 cloves Garlic, peeled and crushed
1 cup peeled and sliced Yellow Onion
1 cup Red Bell Pepper, Julienned (small strips)
1/4 cup chopped Parsely
3 Eggs, beaten at room temperature
2 cups Half-n-Half at room temperature
1 10oz pkg frozen Peas, thawed
1 lb Penne Pasta, cooked al dente
1/2 cup Fresh Basil, chopped (1T +1t dried)
1/4 cup grated Parmesan
Salt and pepper to taste

Heat a large frying pan a and add the oil, garlic, onions, bell pepper, and parsley. Saute until tender. Whisk the eggs and 1/2 & 1/2 together and set aside. Set colander in sink and put the thawed peas inside. Drain the cooked pasta onto the peas. Return the pasta and peas to the pot and add all of the remaining vegetables. Toss to coat. The heat of the pasta will cook the eggs! Serve immediately!

This is a delicious and beautiful recipe. It is vegetarian as written but I have also added cubed ham to the veggies as they saute. Prosciutto is also an excellent addition. It doesn't take much as Prosciutto has a very strong and distinct flavor!
