Swedish Green Split Peas with Bacon Recipe

1/2 lb Bacon, chopped
1 medium yellow onion, diced
1 lb Green Split Peas, washed and soaked for 6 hours
or over night
Salt and pepper to taste
4 Tbs Butter

Directions:
Directions:
Brown bacon in a frying pan and then remove and set aside. Saute onion in the remaining drippings. Drain peas and place in a 4-6 quart pan along with bacon and onions. Add enough fresh water to just cover the peas. Bring to a boil and simmer covered, about 90 minutes or until water is absorbed and the peas are thick. Stir occasionally and add more water if necessary. Stir in seasonings and butter!

This is a Frugal Gourmet recipe. It is served along with Corned pork and Swedish Sauerkraut as part of a Swedish meal. I have served this to my family as a main dish. It is rich and delicious and along with a salad and some buttered bread is nutritious and fillling!
