3 lbs Red Cabbage, cored and shredded
1 1/2 cups Beef stock ( canned or made from soup base)
1/2 cup packed Brown Sugar
1/2 cup Cider Vinegar
4 Tbsp (1/2 stick) Butter
1/4 tsp ground Black Pepper
Salt to taste

Combine all ingredients, except salt, in a 10-12qt. pot. Not aluminum as aluminum will react with the vinegar! Bring to boil, stir, cover, and simmer over low heat for 1 hour 15 minutes, stirring occasionally. Add salt to taste.

This is an awesome recipe. Once again I must give credit to Jeff Smith, the Frugal Gourmet for this one. Jeff Smith's television show, The Frugal Gourmet, took my cooking skills to another level. It was every Saturday on the Public Television station. I watched him religiously! I have several of his cookbooks and have yet to make a recipe from any of them that wasn't absolutely wonderful!
