2 1/2 cups Beef Stock (canned or made from soup base)
1/2 cup Burgundy or Merlot
Salt to taste

Combine wine and stock in a sauce pan and bring to boil. Simmer uncovered until reduced to about 2 cups. If you have pan drippings from your prime rib or rolled rump type beef roast, add them to the sauce and adjust the seasonings accordingly.

This is a delicious and elegant sauce that is so easy. It may be prepared in advance up until the seasonings and extra pan drippings are added. It is also great without the pan drippings but they add a great deal of "depth" and richness to the sauce if you have them!
