3 cups Beef Stock (canned or made from beef soup base)
4 Tbsp (1/2 stick) Butter
1/2 cup Flour
1 Tbsp Maggi Liquid Seasoning
2 tsp Kitchen Bouquet
Salt and freshly ground Pepper to taste

Bring the beef stock to simmer in a 4 qt. saucepan. In a small frying pan, melt the butter and add the flour to make a roux. Cook together over low heat, stirring, until browned slightly, but do not burn. Stir the roux into the the hot stock, using a wire whisk. Whisk and simmer until smooth. Add the Maggi, Kitchen Bouquet, and salt and pepper to taste.

This is one of those NO FAIL recipes! It makes the richest, darkest beef gravy I have ever tasted! I have made this so many times with left over beef roast. It is very different from the gravies mad from a pot roast! It is great with mashed potatoes, or on a Hot Beef Sandwich. Definitely worth a try!

This recipe comes from Jeff Smith's cookbook, "The Frugal Gourmet Celebrates Christmas", where it is called Gravy for Yorkshire pudding!
