1 1/2 c corn oil
2 c sugar
3 eggs
2 tsp vanilla
3 c all-purpose flour
1 tsp soda
1 tsp salt
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
2 c finely chopped, peeled apples
1 c chopped nuts
1/2 golden raisins
Apple cider glaze (optional)

Directions:
Directions:
Beat oil, sugar, eggs, and vanilla until well blended. Combine dry ingredients and add to sugar mixture, beating well. Stir in apple, nuts, and raisins. Spoon batter into a greased and floured 10" tube pan or bundt pan. Bake at 325º for 1 hour and 15 minutes until done. Let cool in pan 10 minutes before removing from pan. If desired, prick top of cake with a fork and drizzle on apple cider glaze.
