2 1/2 c. flour
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. allspice
4 ripe bananas (2 cups)
1 c. sugar
1/2 c. applesauce
2 eggs
2 T. oil
1 tsp. vanilla

Directions:
Directions:
Preheat oven to 375º. Spray one large loaf pan. In a large bowl combine flour, baking powder, baking soda and allspice. In a medium sized bowl whisk together banana, sugar, applesauce, egg, oil and vanilla. Stir applesauce mixture into flour mixture just until moistened. Put batter into prepared pan. Bake 60 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes in pan. Invert onto a wire rack, turn right side up. Cool completely and serve. Makes 16 slices.
