Ingredients:  
1 c. butter or oil (I use 1/2 c. applesauce and 1/2 c. butter)
2 c. sugar (I use only 1 1/4 c.)
4 eggs, beaten well
6-7 well ripened bananas mashed
2 1/2 c. all purpose flour
1 tsp. salt
2 tsp. baking soda
1/2 c. chopped nuts (optional)

Directions:
Directions:
Grease 2 large loaf pans. Cream butter and sugar. Add eggs. Beat well. Add mashed bananas, stir. Fold dry ingredients into batter, mixing well. Add nuts. Pour into pans. Bake at 350 degrees for 50-60 minutes.
