Canola oil for frying
1/4 cup flour
1/4 teaspoon salt
2 large eggs, beaten
1 1/4 cups panko
2 firm, ripe avocados, pitted, peeled and sliced into 1/2” wedges


Chipolte Crema:
2 tbsp canned Chipotle
2 tbsp tomato paste
1 c sour cream

Directions:
Directions:
Preheat oven to 200°. In a medium saucepan, heat 1 1/2” oil until it reaches 375°. Meanwhile, mix flour with 1/4 teaspoon salt in a shallow plate or dish. Put eggs and panko in two other separate shallow dishes. Dip avocado in flour, shaking off excess. Dip in egg, then panko to coat. Set on a sheet pan in a single layer. Fry a few slices at a time.

Crema:

Mix all ingredients together. If consistency is too thick, thin with a bit of warm water.
