2 lbs Ham including bone
6 large carrots
6 med. potatoes, cut in half
1 bunch Green onions, chopped
1/2 c. Parsley, chopped
1 bunch Spinach, chopped
1/2 head cabbage, chopped
2 cans evaporated milk

Directions:
Directions:
In large stewing pot cover ham hock with water. Cook until tender. Add Carrots and Potatoes. During the last 15 minutes add, green onions, parsley, spinach, cabbage and finish cooking.

When ready to serve add evaporated milk.

Kirstine says, "This is my very favorite soup." You can add a "handfull" of rolled oats to thicken. Regular onion can be substituted for green onions.
