2 lbs southern style (diced) potatoes OR hashbrowns -- fresh or frozen okay
1 tsp. salt
1/4 tsp. pepper
1/2 cup finely chopped onion
2 cups shredded sharp Cheddar cheese
1 cup melted margarine (divided)
16 oz. sour cream
2 cups cubed turkey or chicken (optional)
1 can cream of chicken soup
1 cup cornflake crumbs

Preheat oven at 350º.

Thaw potatoes if necessary. Mix potatoes, salt, pepper, onions and cheese. In another bowl, mix 3/4 cup margarine, sour cream and soup. Pour mixture over potatoes and stir gently. Add meat. Put in 3 qt. casserole dish or 9x13 pan. Mix crumbs with 1/4 cup margarine and sprinkle over.

Bake 1 hour, 25 minutes (slightly less if you use a 9x13)
