Ingredients: 1 large can or jar of Sauerkraut (I prefer Frank's) undrained 1 onion diced 1 tsp Caraway Seed
Bacon drippings Salt & pepper to taste 1 tsp sugar

Directions:Saute onion in bacon drippings until translucent. Add caraway, sauerkraut, and enough water to almost cover. Turn down to simmer for at least an hour. |

Notes: The reason that most people don't care for sauerkraut is because it has not been prepared properly. They open an can and heat it. The secret is to cook the kraut for a long time, one hour minimum. Some people drain and rinse the kraut before cooking it. This makes for a much less sharp flavor. My sons and i like it tangy so I do not drain or rinse the kraut.
The bacon drippings lends a wonderful smokiness to this dish. Sauerkraut goes well with pork, beef and poultry. Personally I love it with roasted turkey at Thanksgiving. When I walk into a house where kraut is cooking I am always taken back to my Grandma Short's home and the wonderful family times we had there!
