2/3 c margarine or butter
1 3/4 c sugar
1 tsp salt
2 eggs
1/4 c milk
1 c apricot nectar
2 1/2 c cake flour
3 tsp baking powder
2 egg yolks
lemon extract

Filling:
1/4 c corn starch
1/4 tsp salt
2 tsp lemon juice
2 c apricot nectar
2 T butter
3/4-1 c sugar

Cake:
Cream shortening and sugar, salt, and lemon extract. Add eggs and yolks. Beat until light and fluffy. Combine milk and nectar. Sift flour and baking powder into egg mixture. Add milk and nectar. Beat until smooth. Bake in 3 layers at 350º about 25-30 minutes.

Filling:
Mix first 4 ingredients until smooth. Cook about 5 minutes. Let cool completely and mix in last 2 ingredients. Put filling between layers, then frost with favorite frosting.
