1 cup sifted cake flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
6 tablespoons sugar
2 Tablespoons shortening
2 egg yolks
1/2 cup milk
4 apples, pared and sliced thin
1/2 teaspoon cinnamon
1 teaspoon grated lemon rind

Directions:
Directions:
Sift flour, baking powder, salt and 2 tablespoons sugar together. Cut in shortening and mix well. Beat egg yolks, combine with milk, and stir into first mixture. Beat well. Pour into greased shallow pan and cover with apple slices. Sprinkle with remaining sugar, cinnamon and lemon rind and dot with butter. Bake in hot over 400ºF. about 35 minutes. Serve with lemon sauce.
