1 can (1#11oz) sauerkraut drained, reserve juice, chop up kraut
1 pound bacon
4 tablespoons bacon grease
1 medium onion chopped
1 1/3 cups flour
1/8 teaspoon pepper
1 - 2 tablespoon soy sauce
1 - 2 eggs beaten
1 cup bread crumbs
1 - 2 c oil

Directions:
Directions:
Drain sauerkraut. Reserve juice and add water to make 1 cup. Chop bacon and fry until crisp. Set aside. Fry onion in bacon grease until transparent. Set aside. Add 1/3 cup flour and pepper to bacon fat. If there's not 4 T add butter to make enough. Cook until mixture bubbles. Slowly add juice and soy sauce. Cook and stir until thickened. Add kraut, bacon and onion. Mix. Add salt if necessary. Put mixture in bowl. Chill. Form into bite sized balls. Dip in flour, then eggs, then bread crumbs coating well. Fry in hot oil (375 degrees) for 7 - 10 minutes. Drain. Serve hot. Makes 7 - 8 dozen.
