Ingredients:  
1 pound pork sausage (I use Jimmy Deans sage flavored)
1 cup chopped onion
1 1 pound can sauerkraut drained and chopped
4 teaspoons cracker crumbs
1 8 oz package cream cheese
3 teaspoons chopped parsley
2 teaspoons mustard
2 teaspoons garlic salt
1 teaspoon black pepper
2 or 3 eggs beaten
1/4 cup milk
cracker crumbs

Directions:
Directions:
Cook sausage and onions until no longer pink and onions are tender. Drain well. Mix sauerkraut, cracker crumbs, cream cheese, parsley, mustard, garlic salt and pepper. Combine well with sausage mixture. Chill for at least 1 hour. Remove from refrigerator and with floured hands, shape into small balls. Combine eggs and milk. Dip balls in mixture and roll in cracker crumbs. Deep fry balls until brown. Sauerkraut balls may be frozen. To serve reheat in oven
