3 large eggs
1/2 lb. confectioners sugar (2 c. unsifted)
1 3/4 c. flour
1/2 tsp. baking powder
pinch of salt
1 capful of anise extract (about 1/2 to 1 tsp.)

Directions:
Directions:
Measure all ingredients before starting. Beat eggs until thick and very light in color. Add the sugar slowly, then the dry ingredients. Blend in anise. Drop the dough onto greased cookie sheets by teaspoonful. Let stand overnight in a cool place uncovered. Bake at 325 degrees until creamy beige in color. About 7 minutes.
(Dry cookies will form a cap when baked.) Size of eggs is important and do not use beet sugar. Do not make in humid weather.
