1/2 c. butter
1 c. sugar
1 egg
1 tsp. vanilla (or) 1 tsp. grated lemon rind
2 c. bread flour
1/3 c. thick sour cream or rich milk
1/2 tsp. soda
1/4 tsp. salt

Directions:
Directions:
Beat until soft: butter, adding sugar gradually. Now blend until creamy, 1 egg. Add vanilla. Sift before measuring, bread flour and set aside. Combine sour cream or rich milk, soda, salt. Add the flour to the butter mixture in 3 parts alternating with thirds of the cream. Beat the batter until it is smooth after each addition.
Chill dough for 12 hours or more. Roll it out until it is very thin, use as little flour as possible or roll the dough between sheets of wax paper. Cut into desired shapes.
Sprinkle Cookies with sugar and bake on greased tins in moderate oven at 375 degrees for about 10 minutes or until brown around the edges.
If you want to make these as FILLED COOKIES, follow the above recipe and instead of sprinkling with sugar. Add the following filling in the middle of two cookies and press down the sides with a fork.

RAISIN FILLING:
Boil and stir until thick: 1 c. chopped raisins, figs or dates, 6 T. sugar, 5 T. boiling water, 1/2 tsp. grated lemon rind
2 tsp. lemon juice
2 T. butter
1/8 tsp. salt.
