3 oz. unsweetened chocolate (or German chocolate)
4 eggs
3 cups granulated sugar
1 1/2 cups vegetable oil
3 cups flour
1 1/2 tsp. baking powder
1 tsp. baking soda
1 1/2 tsp. cinnamon
1 tsp. salt
3 cups grated zucchini
1 1/2 cups chopped pecans (or Walnuts) (this can be optional)

Preheat oven to 350º. Grease and flour pans. ( 2 loaf pans or 1 10" tube pan) Melt chocolate over hot water. Cool. Beat eggs until thick & creamy lemon color. Add sugar, beat well. Add oil & cooled chocolate and beat until well blended. Combine flour, baking powder, baking soda, cinnamon & salt into egg mixture and beat until smooth. Add zucchini & 1 cup pecans. Stir until well blended. Batter will be very thick. Pour batter into prepared pans. Sprinkle with remaining nuts. Bake for 1 hour and 15 minutes or until tester comes out clean. Cake is rich, slice it thin. It freezes well.

Dust with sifted confectioners sugar if you want!
