Butcher chickens in usual fashion, but instead of cutting off chicken feet and throwing them out, scald feet and peel yellow outer skin. Chop off toenails with meat cleaver, carefully. (Human fingers could easily be mistaken for chicken feet and go unnoticed.) Put feet in 3-4 quart pot. cover feet with water. Add plenty of onion, salt, and pepper to taste. Bring to a boil. Cover pot and cook over medium heat a long time until feet are tender. On busy days, cook in pressure cooker for a quicker meal. Place pot of chicken feet on table near Dad. No need to pass around the table to others. Supply a medium sized bowl for bones. Avoid serving chicken feet when potential son-in-laws are invited for a meal. Bon appetit.

(Susan) Grandma said Grandpa ate everything, but he liked hlodice- pickled feet (pig and chicken), headcheese (special meats that you cook up and let gel then put vinegar on the meat), and also rendered lard “cracklings” (salted and spread on bread).
