"As I ate the oysters with their strong taste of the sea and their faint metallic taste that the cold white wine washed away, leaving only the sea taste and the succulent texture, and as I drank their cold liquid from each shell and washed it down with the crisp taste of the wine, I lost the empty feeling and began to be happy, and to make plans."--Ernest Hemingway

Directions:
Put yeast in bowl. Stir in milk, sugar and salt. Let stand until yeast is dissolved and bubbly. Stir in well beaten eggs. Add half the flour. Beat until mixture drops from spoon in a sheet - about 5 - 10 minutes. Stir in melted shortening. Stir in remaining flour adding just enough to make dough stiff. Mix well. Then knead until smooth and elastic. Cover, let raise in warm place until doubled - about 2 hours. Meanwhile combine filling ingredients. Add more milk if necessary. Heat over water. Stir occasionally. Roll dough thin on a floured surface. Then spread with walnut mixture.. If desired you can sprinkle with golden raisins and sugar. Roll up as jelly roll. Put on pan. Bake 1 - 1 1/4 hours at 350 degrees.
