5 - 6 medium potatoes cooked
1/4 cup butter
1/4 cup flour
1/2 teaspoon salt
1/2 teaspoon mustard
1/8 teaspoon pepper
2 cups milk
1 1/2 tablespoons horseradish
1/2 cup grated cheddar cheese

Directions:
Dice potatoes. In saucepan over low heat, melt butter. Stir in flour, salt, mustard and pepper. Slowly stir in milk. Cook stirring until thickened. Add horseradish and potatoes. Heat oven to 375 degrees. Place mixture in greased 1 1/2 quart casserole. Sprinkle with cheese. Bake 45 minutes.
