1 1/2 pounds dry navy beans
9 cups water
1/2 teaspoon ginger
1 chopped onion
1 cup catsup
1 cup brown sugar or 1/2 cup brown sugar and 1/2 cup maple syrup
2 teaspoons dry mustard
2 tablespoons molasses
1 tablespoon salt
1/4 pound salt pork diced
water

Directions:
Directions:
Sort beans and rinse. Soak beans with 9 cups water overnight. Add ginger to beans and simmer until skins pop when gently pressed between thumb and forefinger. Heat oven to 250 degrees. Drain beans and add to bean pot or heavy lidded casserole. Add remaining ingredients except water. Stir well. Cover tightly with foil before putting on lid. Bake beans 8 hours checking occasionally to see if water is needed. Uncover beans during final hour of cooking.
