2 cups canned salmon rinse and flake
2 teaspoons salt
2 tablespoons sugar
2 teaspoons flour
1 teaspoon dry mustard
dash cayenne
3 egg yolks
2 tablespoons melted butter
1 cup milk
1/4 cup vinegar
1 tablespoon unflavored gelatin dissolved in 2 tablespoons cold water
Cucumber Sauce
1/2 cup heavy cream
2 tablespoons vinegar
1/4 teaspoon salt
pepper
2 cucumbers pared, chopped and drained.

Directions:
Mix dry ingredients together. Add egg yolks, butter, milk and vinegar. Cook in double boiler or put bowl over boiling water stirring constantly until thick. Add gelatin and salmon. Pour into mold. chill For sauce: Make sure all ingredients are chilled. Beat cream until thick but not stiff. Add vinegar gradually while beating. Season with salt and pepper. Fold in cucumbers. Serve with salad.
