1/4 cup wine vinegar
1 clove garlic minced
1 whole bay leaf
1/2 teaspoon salt
1/2 teaspoon coarsely ground pepper
2 tablespoons olive oil
2 tablespoons chili sauce
2 cans whole pimentos chopped
1/4 cup chopped black olives
1 can anchovies drained and chopped
2 tablespoons lemon juice

Directions:
Directions:
Combine vinegar, garlic, bay leaf, salt and pepper in a pan. Bring to a boil. Reduce heat and simmer 5 minutes. Cool. Stir in oil and chili sauce. Pour over drained, chopped pimentos. Let stand 4 hours or overnight. To serve, drain pimentos and combine with chopped anchovies, black olives and sprinkle with lemon juice. Serve with crackers.
