3 eggs
2 C sugar
1 C cooking oil
2 C shredded zucchini (unpeeled)
2 C unsifted flour
1 tsp cinnamon
1 1/2 tsp baking soda
1 1/4 tsp salt
1/4 tsp baking powder
1 C chopped walnuts

Directions:
Directions:
Beat eggs until light and frothy. Stir in remaining ingredients until well blended. Grease two 8X4" loaf pans. Divide batter between the two pans. Bake in 350 oven for 45 minutes or until edges have pulled away from pan and center springs back when touched. Freezes beautifullly.
