Pastry for bottom and top 9" pie pan
3/4 to 1 c. of sugar
1 tsp. ground cinnamon
6 to 7 c. tart cooking apples, peeled and sliced
1 1/2 T. butter

Directions:
Directions:
Line a 9" pie pan with the pastry. Mix the sugar and the cinnamon with the sliced apples and then heap them into the bottom crust. Dot them with butter. Arrange the pastry over top. Trim edges and flute. Cut slits for the steam to escape. Bake in the preheated 425º oven for 50 minutes or until browned and the apples cooked. Serve hot or cold. Good with whipped cream or ice cream.
