1 1/2 gal chopped Vidalia onions (20 lbs)
1/2 cup salt
1 qt apple cider vinegar
1 tsp tumeric
4 tsp picking spice (tied in cheesecloth)
4 tbsp chopped pimentos
4 1/2 cups sugar

Directions:
Directions:
Grind or chop onions to yield 1 1/2 gallons. Add 1/4 cup of salt and let stand for 30 minutes. Squeeze juice from onion-salt mixture, discard juice. Tie pickling spice in cheesecloth. Combine onions, vinegar, sugar, tumeric spice bag and pimento in large sauce pot. Bring to a boil. Cook until thick (approx 30 mins. stirring often). Remove and discard spice bag. Pack both onions and cooking liquid to cover in hot jars. Leave 1/2 inch head space. Remove air bubbles. Wipe rims. Adjust lids. Process 10 minutes in a boiling water bath.
