Ingredients: 3 cups cooked chicken cubed 2 cups cooked white rice 1 can cream of chicken soup 1/2 cup milk 1 med sweet yellow onion chopped 1 cup sauteed mushrooms 1-1/2 cups of grated cheddar cheese 1/2 cup garlic herb bread crumbs 1/2 cup of Frenchs fried onions salt,pepper and garlic powder Olive oil 4tbsp of butter

Directions:Preheat oven to 350º and grease casserole dish. In a large skillet add 2 tbsp of olive oil. Add chopped onions,and mushrooms and sautee until tender Add in cubed chicken and stir until chicken is heated and season to taste with salt, pepper and garlic powder.(substitute 1 clove of garlic chopped) Pour chicken, mushrooms and onion mixture into a large bowl. In a seperate bowl add cream of chicken soup and milk.Stir until well blended then add to chicken mixture. Add in 1/2 cup of grated cheddar cheese and stir until everything is well blended. Pour chicken mixture into casserole dish Top with French fried onions, bread crumbs and cheese. Cut butter into small pieces and add to the top of casserole.(butter is optional) Cover with foil and bake for 30-40 minutes or until bubbling. Pull foil of at the last 10 minutes of cooking to brown the top.
