1 1/4 C butter,
2 C sugar,
2 eggs,
2 tsp. vanilla extract,
2 C flour,
3/4 C cocoa powder,
1 tsp. baking soda,
1/2 tsp salt,
32 individually wrapped York Peppermint Patties

Directions:
Directions:
In a medium mixing bowl, combine all dry ingredients and whisk together.

In a large mixing bowl, cream butter and sugar together. Add eggs one at a time beating between each addition. Add vanilla extract. Gradually add dry ingredients to creamed mixture, beating until well combined.

Use cookie scoop to drop equal size cookies 2" apart onto an ungreased baking sheets. Bake @ 350 degrees for 8 - 9 minutes or until puffy and tops are cracked.

Remove hot cookie trays from oven. Wait 2 minutes before inverting half of the cookies upside down and placing a peppermint pattie on top of each inverted cookie. Gently place the other cookies on top of the patties (DO NOT PRESS). Wait 2 minutes to give the patties a chance to melt and soften then press each cookie gently causing the melted peppermint pattie to spread as you press. Transfer sandwich cookies to wire racks to finish cooling.
