5 pounds bag red potatoes (use these because you don't have to peel them)
1 pound bacon fried till crisp and crumbled
3/4 large brick (2#) Velveeta cheese cubed
1 medium onion chopped
1 cup mayonnaise ( do not use fat free or low fat!)

Directions:
Directions:
Bake potatoes let cool and chop into bite sized pieces. Combine all ingredients in 9 x 13 pan that was sprayed with non stick spray. Mix with mayo until well blended. You may have to add a little more to be sure all ingredients are coated well. Bake at 375 degree oven for 35 - 45 minutes or until bubbly and golden.
