2 Artichokes
2 cups breadcrumbs
1/4 cup Parmesan cheese
salt, pepper, oregano
olive oil & water

Cut bottoms and trim tops even on artichokes. Bang tops to loosen leaves. Spread leaves apart. Soak in salted ice water for one hour. Drain and pat dry. Sprinkle insides of leaves with salt before stuffing.
Mix breadcrumbs, cheese and seasonings in a large bowl.
Drizzle oil and some water on stuffing (more oil than water) until stuffing is moist.
Place first artichoke in center of the bowl with stuffing. Pack stuffing into the center of the artichoke as much as possible then stuff the outer leaves. Repeat with the next artichoke.
After stuffing is complete, place artichokes in a sauce pan with a cover. Add water until half way up on artichokes. Season the water with salt, pepper, oregano, garlic and oil (SPOGO). Cover pan and bring to boil. Reduce to simmer for 1 1/2 to 2 hours until outer leaves are tender.

Stuffed artichokes were one of mother's signature dishes. She made them for every big occasion. She dictated this recipe to me after Nancy and I were married. Now our daughter Kim makes an excellent version of Gram's original recipe.
