3 T. olive oil
2 lg. yellow onions, halve and very thinly slice
3 T. unsalted butter
1/2 bunch Swiss chard, ribs removed and leaves chopped
Salt and fresh ground pepper to taste
10 eggs
1/2 c. heavy cream
2 T. minced fresh parsley
1 c. grated Gruyere cheese

In skillet, heat oil over med heat. Add onions and cook until limp, 10-15 min. Reduce heat to med low and cook, stir freq, until onions are golden brown and sweet, 35-40 min. Let cool out of pan. Save 6 T. for the frittata, use rest for another use, will keep refrig 3 days.
In skillet, melt 3 T. butter and add chard and pinch of salt.Cook until wilted, 3-4 min.Drain and let cool.
In bowl, whisk eggs, cream, salt, pepper, parsley. Stir in chard, cheese, and 6 T. onions.
Add egg mixture and cook about 7-10 min until most of liq has cooked off.
Can finish off in oven if desired at 450º 6-8 min . Let rest 3 min. Can serve hot or room temp.
