1 1/2 c. all purpose flour
1 T. sugar
1/2 t. salt
6 T. unsalted butter, chilled, cut into small pieces
3 T. veg shortening, chilled, cut into small pieces
4 T. or more ice water

Directions:
Directions:
Blend flour, sugar, salt in food processor. Add butter and shortening, pulse until mixture resembles coarse meal. Drizzle 4 T. ice water over the mixture. Process just until moist clumps form, adding more ice water by tsp if dough is dry. Gather the dough into a ball and flatten into disk. Wrap in plastic. Chill 1 hr. Use dough with fav. pie recipe.

Roll out dough on lightly floured work surface into a 14 in. round. Transfer the dough to a 9 in diameter glass pie dish. Fold the overhang under. Crimp edges. Pierce bottom of crust all over with a fork. Freeze crust 15 min. Can be made 1 day ahead and frozen.

If need to prebake, preheat oven to 375º. Line crust with aluminum foil. Fill with weights or dried beans. Bake 20 min. Remove wts and foil. Bake until golden and set, about 10 min. Cool. Crust can be made 1 day ahead and wrap tightly with plastic wrap. Let stand at room temp.
