2 c sugar
1 c butter
2 1/2 c applesauce
2 eggs, beaten
2 c raisins
2 c walnuts, chopped
4 c flour
1 tsp salt
1 T soda
1 tsp baking powder
1 tsp cloves
1 tsp nutmeg
2 tsp cinnamon
2 lb candied dried fruit mix
1 1/2 c chopped dates

Directions:
Directions:
Cream sugar and butter. Add beaten eggs and applesauce. In a separate bowl mix flour, salt, spices, soda and baking powder, then gradually add to other ingredients. Mix well. Blend in candied fruit, dates raisins and nuts. mixture will be stiff. Bake in 325º oven in 2 or 3 (depending on the size) loaf pans for 1 hour. Cool and remove fruitcake from pans. Cut a piece of cheesecloth to fit and soak in 1/2 cup rum, brandy or bourbon. Pour any remaining alcohol over the fruitcake. Wrap the fruitcake in cheesecloth and the cellophane, followed by aluminum foil. Additional alcohol can be added as the liquid soaks into the fruitcake. Store in refrigerator for up to three months.

I have used mixed dried berries instead of raisins and soaked them in the alcohol overnight just to change things up a little.
