1 C. heavy cream
10 oz. (21/2bars) bittersweet chocolate, break into pieces (small).
3T. unsalted butter, cut into small pieces

Directions:
Pour cream into saucepan, boil over medium heat. Remove from heat and add chocolate all at once. Stir gently til melted with cream. Stir in butter until melted. Strain into bowl and cool to room temperature, cover with clear film and chill 4 hours or overnight.

Assembling Truffles
Line a large baking sheet with wax paper. Using ice cream scoop, scoop 40-50 balls. Freeze for one hour. For perfect results take 14 oz. bittersweet chocolate, melt in a double boiler. Wait until chocolate gets to 95º-100º.
Put 5 or 6 truffles on small squares of wax paper,Keep in the freezer, and take 5-6 out at a time. Keep truffle balls frozen until ready to dip in the melted chocolate.
