1 c. Italian rice
1 T. chopped white onion
1 pinch saffron
1 oz white wine
3 c. chicken broth
1 T. butter
2 T. Parmesan cheese
1 T. olive oil

Directions:
Directions:
Saute onions in olive oil. Add rice, saffron and cook until rice is glazed. Add wine, chicken broth and cook constantly until rice is al dente (done). Remove from heat. Add butter and cheese.
