Gnocchi:
1 1/4 cup ricotta cheese
1 cup chopped spinach
1/4 cup Parmesan cheese
1/4 cup Swiss cheese
1/4 cup Fontina cheese
2 egg yolks
6 tbsp. fresh bread crumbs
2 tbsp. soft butter
nutmeg

Cream Sauce:
1 stick unsalted butter
1/2 cup flour
4 cups milk-scalded
nutmeg

Directions:

Mix gnocchi and chill for one hour. Shape with spoon (2 heaping tbsp. each).

Mix cream sauce and cook until thickened.

Layer gnocchi on cream sauce, cover with fresh tomato sauce, and another layer of cream sauce. Bake at 350º for 25-30 minutes.
