3/4 c. Minute Rice
4 eggs
6 1/2 oz. can tuna, drained
1 c. skim milk
6 1/2 oz. broccoli
1/4 tsp. salt
small onion, finely chopped
1/4 tsp pepper
6 oz. shredded Mozzarella cheese

Directions:
Directions:
Preheat over to 400 degrees. Spray bottom and sides of round casserole dish with nonstick cooking spray. Cook rice and cool slightly. Press rice on bottom and sides of casserole dish. Spoon tuna over rice. Spoon broccoli (can use frozen broccoli, but let thaw completely before using) over tuna, then chopped onion. Next, layer cheese over onion. In small bowl mix together eggs, milk, salt and pepper and pour over casserole. Bake uncovered for 45-50 minutes.
