2 Tbls. olive oil
1 Tbls. fresh lime juice
1 Tbls. chopped fresh cilantro leaves
4 red snapper fillets, 8 oz each
salt and pepper to taste

For salsa:
2 large ripe tomatoes
2 Tbls. chopped scallions
2 Tbls. chipped fresh cilantro leaves
2 tsp.s finely minced garlic
1 Tbls olive oil
2 tsp. fresh lime juice
salt and pepper to taste

Directions:
Directions:
Preheat oven to 400º. Lightly oil a small baking sheet.
Combine the olive oil, lime juice and cilantro in a small bowl. Place the fish, skin side down, on the baking sheet. Brush with the oil mixture and sprinkle with salt and pepper. Let rest for 15 minutes. Then bake for 30 minutes or until just cooked through.
Meanwhile, combine all the salsa ingredients in a bowl. Remove the snapper to a platter. Top with the salsa. Serve Immediately.
