1 cup finely chopped walnuts
2/3 cup fresh bread crumbs
2 Tbls. butter, melted
2 Tbls. chopped parsley
four 6 oz salmon fillets, skinned
4 tsp. low fat mayonnaise

Cucumber Yogurt Sauce:
1 cup plain non fat yogurt
1 small garlic clove minced
1/2 English cucumber grated

Directions:
Directions:
Preheat oven to 425º.
Combine the walnuts, bread crumbs, butter, parsley and salt, pepper to taste. Season the salmon fillets with salt and pepper and set, skinned side down, on an oiled baking sheet. Spread a tsp. mayonnaise on top of each fillet and top with the walnut mixture, pressing the mixture into the fish. Bake the salmon until just done, 10 to 12 minutes.
While the fish bakes make the sauce: In a small bowl combine the yogurt, cucumber, garlic, and salt and pepper to taste. Serve the sauce with the fish.
